MAKING YOUR OWN NUT MILK – PART 3 (the last of a 3-blog series)

November 13, 2016

I know what you’re thinking: “FINALLY…the ‘yummy recipes’ she’s been promising for 3 weeks now!” I know I’ve been stringing you along a little and I apologize. But here’s the really good news: I came up with not just one but three recipes :o)

JESSICA’S COCONUT MILK

Combine 1 cup of unsweetened flaked coconut and 2 cups of cold filtered water in a GOOD blender (I use the Vitamix). IF YOU LIKE, add a dash (I use 1/4 - 1/2 tsp) of salt (I prefer Kosher), and a splash of vanilla extract (I use Trader Joe's Alcohol-Free). You can also add sweetener of choice to taste (the most I ever use is 1 scoop of Trader Joe's Pure Stevia Extract...the serving scoop comes with the jar and I believe it holds 1/16 tsp...looks like a coke spoon :o)

Blend for 3 minutes or until desired consistency is reached. You can serve immediately but I prefer to chill for a couple of hours. IF YOU LIKE you can strain the mixture by pouring through a filtration bag or (this is what I usually do) a cheesecoth laid in a fine mesh sieve. Makes about 2.5 cups…store leftover "milk" in the fridge in a leakproof container (I use Jaxx Shaker Cups…click here for more info on all the “Things I Like”) and shake before using...keeps for 4-7 days.

JESSICA’S ALMOND MILK

(NOTE: I do kinda wing this recipe so my measurements aren't completely precise...perhaps the best thing would be for you to start with this recipe and figure out what you like best!)

Toss a couple of raw cashews into an 8 oz measuring cup then fill the rest of the cup with raw almonds. Combine the nuts and 2 1/2 cups filtered water in a GOOD blender (I use the Vitamix) and refrigerate overnight.

In the morning add a dash (I use 1/4 - 1/2 tsp) of salt (I prefer Kosher), and a splash of vanilla extract (I use Trader Joe's Alcohol-Free). IF YOU LIKE, you can also add sweetener of choice to taste (I use 1 scoop of Trader Joe's Pure Stevia Extract...the serving scoop comes with the jar and I believe it holds 1/16 tsp...looks like a coke spoon :o)

Blend for 3 minutes or until desired consistency is reached. You can serve immediately but I prefer to chill for a couple of hours and let the flavors really blend. IF YOU LIKE you can strain the mixture by pouring through a filtration bag or (this is what I usually do) a cheesecoth laid in a fine mesh sieve and save ground up bits for recipes calling for cracker crumbs. Makes 28-30 ounces…store leftover "milk" in the fridge in a leakproof container (I LOVE Jaxx Shaker Cups…click here for more info on all the “Things I Like”) and shake before using...keeps for 4-7 days.

JESSICA’S ALMOND-COCONUT MILK

(NOTE: this is simply a modification of my Almond Milk recipe...makes a nice alternative to just plain almond milk! But again if this isn’t exactly what you like perhaps the best thing would be for you to use this recipe as a jumping off point and figure out what you like best!)

Toss a couple of raw cashews into an 8 oz measuring cup then fill the rest of the cup with raw almonds. Combine the nuts, plus ½ cup unsweetened flaked coconut and 4 cups cold filtered water in a GOOD blender (I use the Vitamix) and refrigerate for 8-10 hours or overnight.

In the morning add a dash (I use 1/4 - 1/2 tsp) of salt (I prefer Kosher), and a splash of vanilla extract (I use Trader Joe's Alcohol-Free). IF YOU LIKE, you can also add sweetener of choice to taste (the most I ever use is 1 scoop of Trader Joe's Pure Stevia Extract...the serving scoop comes with the jar and I believe it holds 1/16 tsp...looks like a coke spoon :o)

Makes close to a half-gallon…store leftover "milk" in the fridge in a leakproof container (I use two 24 ounce Jaxx Shaker Cups…click here for more info on all the “Things I Like”) and shake before using...keeps for 4-7 days.
